Aluminum applications in the food industry

Relevance

The modern food industry is impossible to imagine without aluminum. But not all products are regulated by GOST. Questions arise when you need to clad the inside of a container or box for food, make a mold for muffins, tray, to outline the counter. What kind of aluminum can be called food-grade aluminum? For products made of aluminum or aluminum alloys - just open GOST.

GOST 1583-93. П. 3.3

Alloys AK7, AK5M2, AK9, AK12 are used for food products. Use of other alloys for products and equipment in contact with food products and environments must be permitted by health authorities in every particular case. In aluminum alloys for food products the proportion of lead must not exceed 0,15%, arsenic - 0,015%, zinc - 0,3%, beryllium - 0, 05%.

GOST 1583-93 item 4.1.6.1

Stocks for the manufacture of products and equipment in contact with food, are marked in the absence of color markings with an additional letter "P" after the designation of the alloy grade.

GOST 17 151-81. item 2.3.

It regulates the production of household utensils from aluminum sheets Dishes shall be made of sheets and strips of aluminum of AD1 and AD grades with the chemical composition according to GOST 4784, aluminum grades A7. А6. А5, А0 with the chemical composition according to GOST 11 069 and bimetallic strips of aluminium of АД1 and АД marks (chemical composition is regulated by GOST 4784) and steel strip of 12X18H10T and 08Х18Н10Т marks with the chemical composition regulated by GOST 5632. If there is an internal coating in dishes it is allowed to make them from sheets and strips of aluminum alloy of АМц brand (chemical composition complies with GOST 4784). Fasteners having contact with food products must be made of the same materials as the tableware. Chemical composition of fittings (handles, horns, lugs and etc.) made of aluminum shall comply with GOST 11 069, and those made of aluminum alloys shall comply with GOST 4784.

GOST 51 016-97

It regulates the general technical conditions for production of cutlery made of carbon steel and aluminum alloys. Cast aluminum alloys AK7, AK5M2, AL22 (AMg11), AL23 (AMg6l) are used for making fragile aluminum cutlery, and soft aluminum cutlery is made of cast aluminum grades AD1M, AD1 A0, ABM, AB, and AMg2.

Cutlery

It is allowed to contact with foodstuffs with primary aluminum of А, А, or technical aluminum wrought of АД-AD0 grades (not to be confused with Al-Mg-Si alloys АД31, АД33, АД35, though forks and spoons are also produced from АB grade alloy). GOST permits the use of magnesium alloys in sheets of AMg2 and in ingots of AL22 (AMg6l), AL23 (AMg11), as well as Al-Mg-Si alloy of AB for the production of forks and spoons. GOST 4784 Aluminium and Aluminium Wrought Alloys. Grades" complements the allowed list of food alloys below with the following specification.

GOST 4784, clause 3.8

In aluminium alloys, which are intended for production of articles for food purposes, the share of lead must not exceed 0.15% and the share of arsenic 0.015%. However, GOST 4784 does not specify the allowable share of beryllium and zinc, as GOST 1583 forLogically, that in the deformed alloys should not be lead and beryllium more than allowable concentrations, except AMG5, AMG6, D19, where the beryllium - from 0, 02% to 0, 5% (GOST 1583 allows 0.05%), as well as some brands of welding wire: СвАМГ5, Св1557, СвАМг6, СвАМг61, СвАМг63 where beryllium is from 0,2% to 0,5%.

SNIP in Ukraine

Sanitary norms and rules 42-123-4240-86 are in force in Ukraine. "Permissible migration quantities (PMQ) of chemical substances emitted from polymeric and other materials in contact with foodstuffs and methods of their determination". The document has standards of DKM of metals emitted by polymers, but there is no standard DKM for metal products.

Certification

The basic document is still approved by Ministry of Health of the USSR from 7.VIII.79 № 123-12.328-7 with additions RTM 27-72-15-82 "The order of application of metals, synthetic and other materials in contact with food products and media. The finishing materials approved by the Ministry of Health of the USSR are still referred to SNIP (sanitary norms and rules) for food enterprises. The rules provide for a hygienic certificate for the use of a particular alloy, if the alloy complies with RTM 27-72-15-82. What to do if you need to clad a counter or box? It is best to take sheets of aluminum grades, A or AD, approved by GOST for the manufacture of pots, or ask for a certificate in sanitary-epidemiological control.
